The Back Side

 Hi everyone!  Oh my gracious, I've been so busy with the hipcamp hosting and all of our grandkids!  I can't tell you how excited I am every time I get to share our hipcamp site with someone new.  We have had fun and can't wait to see what the future holds for us in this venture.   I have ideas for glamping and winter camping but shhhh,  Ray doesn't know about those yet! Hahaha

Hipcamp

 I've just become a hipcamp host and I'm so excited about it!  I love sharing our land and surrounding areas with everyone and showing them what my area has to offer.   There is fishing,   hiking,  biking,  mountain climbing,  ATVing,  wildlife,  trails,  swimming,  boating and sooooo much more! Betty F'n Crocker

 Hey! Sorry about the title for this post! Haha  I couldn't resist! That's a sarcastic nickname my husband and his family call me. 

 I really don't mind cooking but I want it done fast and I usually don't have all the ingredients I need for the recipe I want to use. 

 I AM the queen of 30 minute meals! Get home at 5pm, grab a beer or glass of wine and chill for half an hour then watch out! 6pm and supper is on the table.  

I have had more time to spend in the kitchen over the past year because of the pandemic and I actually realized that I love cooking!  Trying new recipes,  got an instant pot (hated it at first), baking muffins for breakfast..... Even the recipes that are long and have multiple steps and not just dump recipes,  I enjoy more and more. 

This morning its coffee cake muffins.   Thankfully they came out tasting sooo good,  but here's the lowdown on the process. I got everything out, needed buttermilk and didn't have any.  Looked up a recipe for that. 


All good.  Next I didn't have enough flour,  got out the coconut flour

and made up the difference.  All good.   Next I didn't have enough baking powder,  ugh.... at this point I'm thinking these muffins are going to be crap!  I kept going and found subs for baking powder. 

 All good.   Ran out of sugar next which I needed for the crumb topping,  luckily I have erythritol from my keto days.   The batter is super thick. 

Ok so fast forward to the finished product.......drum roll please! 


The I wasn't sure how the crumb topping would be so I didn't put it on all the muffins in the first batch.  It did burn a little bit.  My husband tried the muffins without topping and I held my breath until he said "mmmmm, very good ".   Phew! They are soooo good!  The little pocket of cinnamon and sugar in the middle is a yummy little surprise 😋 


Alright, I'm out of here! Going out on the pond to check the ice and see if there's enough for ice fishing! Have a fabulous weekend!

Happy New Year!

 


Good morning and happy new year!  So 2020 is over and honestly it wasn't that awful for me and my family.   I hope most can see the good that came from the pandemic.   I like to look at the glass as half full.  More time with my husband and cats spent at home together where I love to be but rarely get to have so much down time.   We definitely appreciated the time we have spent with our kids and grandkids although it was less than I wanted.   We are thankful for our health,  our homes our families and our jobs.  



I have been trying to keep up with my exercise and healthy eating throughout the holidays and I can honestly say that I am glad they are behind us!  I started doing HIIT workouts on the treadmill which I am loving because I get to run for 20 minutes or so and get the benefits of 24 hour fat burning!  Whats not to love?? 



Some of the supplements I have been taking are calcium,  vitamin D3, collagen and hormone balance.  Wow!  You don't realize what your body can do to heal itself until you try collagen and an all natural hormone balance supplement.  Joints, hair,  nails, sleep, energy.....I could go on and on!  I love bone broth and have made it in my instant pot 😋,  but its much easier to put a tsp in my coffee ☕.   You can buy collagen supplements and it is recommended to buy grass fed if you do.  I am now trying gelatin in my coffee.   We'll see if the benefits are as good.   I will let you know next time! 

Diet has always been something I try to avoid.   I try to get the most out of the food that I eat.  I did keto a couple of years ago with good results.   I'm back on it partly,  just avoiding processed carbs, and eating more protein.  Mug cakes are my go to sweet foods.   I am having chocolate with peanut butter and banana  this morning!  Delish! Made with coconut flour. 


Try collagen this way: get some gelatin,  put a half cup of half and half in a mug with a tsp of gelatin,  a dash of cinnamon and a splash of real maple syrup.  Warm it in the microwave for 45 seconds,  whisking it a couple of times then pour into hot coffee.
